HOW MANY TYPES OF RICE ARE THERE?

Rice can be sorted into three unique categories: short grain, medium grain and long grain rice. Short grain rice has a tender, soft and even sticky texture when it’s cooked. This includes types like bomba rice, brown short grain rice, some varieties of sticky rice and sushi rice. Medium grain rice—like arborio or forbidden black rice— is slightly more chewy than short grain rice, while long grain rice has a light and fluffy texture once cooked. Common long grain rice includes sticky rice, long grain white rice, jasmine rice, brown rice and basmati rice.

WHAT TYPES OF RICE ARE BEST FOR RICE DISHES?

Common Asian recipes like sushi, poke bowls or rice balls are best made using short grain rice that easily sticks together once it’s cooked. Medium grain rice works best for risotto, paella or side dishes, and long grain rice is ideal for making seasoned rice, casseroles, stir fries, pilafs or bowls.

WHAT ARE SOME OF THE MOST POPULAR RICE DISHES IN THE WORLD?

You’ve likely enjoyed some of the world’s most famous rice dishes, but knowing where they’re from can be a starting point to finding more of what you like. Fried rice, for example, originated in China and is found in varieties like miso fried rice, chicken fried rice and more. Dum biryani, a dish originating in India, is another that’s found its way around the globe. Risotto is a popular Italian rice dish, and simple onigiris is a Japanese rice dish easy to customize to your tastes. You can experiment with Latin American flavors by building on a basic arroz con pollo recipe, a traditional Spanish dish. Or, try your hand at making Spanish rice by following this easy recipe.

CAN I STORE COOKED RICE FOR LATER USE?

Storing cooked food for later use can help you get a head start on meal prep. According to the USDA, safely storing cooked food starts with cooling it to 40° F or below as quickly as possible. You can usually store cooked rice in an airtight storage container for 3 to 4 days, or in the freezer for 3 to 4 months. Reheat frozen rice by removing the lid from the storage container and adding 1-2 tablespoons of water for each cup of rice. Then warm the rice in the microwave—or steam in a saucepan—for 3-4 minutes until it’s hot throughout. Use a food thermometer to make sure the internal temperature of reheated rice is at least 165° F before serving.
