  • Heavy cream

  • Dark chocolate, chopped

  • Eggs, room temperature

  • Brewed espresso or coffee

STEP 1: WHIP HEAVY CREAM

Using your KitchenAid® blender or a large mixing bowl, whip the heavy cream to medium peaks. Begin blending on speed 1, slowly increasing speed to medium. Continue blending until the cream is whipped and voluminous, which will take about 10-20 seconds. Set it aside in the refrigerator.

STEP 2: MELT SUGAR AND DISSOLVE WATER

In the small saucepan over low heat, melt the sugar and dissolve it into the water. As soon as it begins to boil, turn off the heat and allow it to cool.

STEP 3: BLEND CHOCOLATE AND EGGS

Add the chocolate and eggs to your KitchenAid® blender and blend on medium-high speed while slowly adding the sugar and water mixture.

STEP 4: ADD ADDITIONAL INGREDIENTS

Continue blending until the mixture is very smooth and then add the espresso, if you are including it, vanilla, salt and rum or brandy, if desired. Keep blending until it has cooled to room temperature. Use a rubber spatula to scrape the sides if needed.

STEP 5: FOLD WHIPPED CREAM INTO CHOCOLATE MIXTURE

In your blender jar, fold part of the chocolate mixture into the chilled whipped cream, gently blending until it is smooth. Add the rest of the chocolate mixture to the whipped cream.

STEP 6: PORTION AND SERVE

Pour your mousse into individual serving dishes and allow it to chill until firm, at least 2 hours or up to 24 hours. Serve the mousse chilled.

WHAT MAKES MOUSSE THICK?

Including additional egg yolks gently heated with heavy cream (called a liaison) or adding butter or corn starch can thicken mousse to a more pudding-like consistency. You can also add more chocolate or more whipped egg whites to help thicken.

WHAT MAKES MOUSSE GRAINY?

Mousse can become grainy if the cream has been overwhipped. Adding fresh cream to your mixture can help fix the grainy texture. Chocolate can also break which will make it grainy if exposed to water. The best way to fix this is to add some alcohol, like rum or bourbon, or strong coffee.
